The 25-year-old man drinking at a tavern in Boxwood outside East London, SA, got into an argument with another punter who then took out a gun and shot him in the head.
The gunman fled after the shooting.
The tavern owner then called cops and an ambulance.
Emergency Medical Services staff members examined the body and certified the man dead and then left the scene.
Mortuary staff were about to take the body when they noticed the man was breathing and his lips were moving.
He was covered with a blanket and the ambulance was called again. Another team of paramedics arrived at the scene.
They examined him and found that he was still breathing. The man was stabilised at the scene before being taken to hospital.
Police spokesman Captain Stephen Marais confirmed the incident.
He said the suspect is known to the police and a case of attempted murder was opened.
